Crispy Crunchy Dry Rub Oven Baked Wings



What You'll Need



-4 lbs. chicken wing sections ( I prefer the smaller wings for extra crispiness )


-1 celery bunch  cut into long strips  for side serving


-1 small bag of baby carrots for  side serving


-Ranch dressing (make sure to choose a healthy ranch, no added sugar)


-2 Tbsp. extra virgin olive oil


(for the dry rub)


-2 Tbsp. chili powder


-2 Tbsp.  smoked paprika


-1Tbsp cumin


1 tsp Italian seasoning


-1/2 Tbsp. onion powder


-1 tsp garlic powder


-1/2 Tbsp.  salt


-1/2 tsp dried mustard powder


-1/2 tsp cayenne pepper or black pepper  (cayenne for a more spicy option)





Instructions



Preheat the oven to 400 F degrees.  If you have convection or air bake mode use this for added crispiness.  Line a large cookie sheet, with sides ,with  aluminum foil. Place a baking wire rack on a cookie sheet so wings do not touch the foiled sheet. Coat wire rack with non-stick spray.


Wings need to be fully thawed and dry.


In a small mixing bowl combine all dry rub ingredients, stir and set aside. In a large mixing bowl, toss wings with olive oil to coat them all.


Divide the dry rub into 2 portions, that  way if it becomes clumpy you have more fresh to use for better coating of the wings.  Place the 1st half of the dry rub in a small shallow bowl and dip a few chicken wings at a time, roll them to fully coat then place on a wire rack on a baking sheet. Repeat until all wings are rubbed.





Place in the oven. Cook for 45-60 min depending on the size of the wing.  Allow to cool, move to a plate, serve with the side celery and carrots and a healthy ranch for dip.
