Crazy Addicting Sweet and Spicy Kung Pao Shrimp

Ingredients

2 lb large shrimp (raw) 8 Tbsp garlic, chopped 2 cup fresh snow or snap peas 2 bell pepper any color variety, sliced 1 cup nuts your choice (cashews, peanuts, almonds) chopped 1 Tbsp extra virgin olive oil 1 bunch green onion, chopped 1 cup cooked whole grain quinoa (prepare as directed on label)

for sauce

4 Tbsp liquid aminos (Braggs is a great brand for this) 2 Tbsp tomato paste 1 Tbsp red chili sauce 1 Tbsp rice or apple cider vinegar 1 Tbsp honey 1 Tbsp ginger, minced 1 Tbsp arrowroot starch


Directions


In a bowl, add ingredients for the sauce and whisk together. Set aside.

Use a non-stick skillet on medium-high heat, add garlic and sear for about two minutes.

Add shrimp and cook for about 3 minutes, until shrimp are light pink.

Then, toss in peas and chopped bell peppers and sear for about three minutes, continue to stir while cooking.

Next slowly pour in the sauce mix. Cook for 1 minute then remove from heat.

Place on top of cooked quinoa. Garnish with green onions and nuts.
