Savory White Bean Soup

This delicious rich flavorful soup is loaded with nutrition and high in fiber. Perfect Hardy dinner for fall or winter night. Also great to make ahead, freeze and reheat for busy nights.



Savory White Bean Soup



Ingredients



2 Tbsp olive oil


5  celery stalks, chopped


1 sweet onion, chopped


3 (15 ounce) cans no-salt-added great northern beans, rinsed


2 tsp minced garlic


2 Tbsp Italian seasoning


½ tsp salt


½ tsp ground pepper


½ tsp crushed red pepper (increase or decrease for desired spiciness)


4 oz Parmesan cheese


4C  lower sodium chicken broth or bone broth


1C half and half or heavy cream depending on your desired thickness of soup


1 Tbsp lime juice


1 bunch parsley chopped for garnish



Directions



Heat oil in a large pot over medium-high heat. Add onion and celery; cook until the onion is


translucent and celery soft, about 5 minutes. 

Add garlic, Italian seasoning and crushed red pepper, salt and pepper, stir to coat veggies.


Stir in beans, Parmesan, chicken broth, bring to a simmer and cook, stirring occasionally, until the vegetables are tender, about 20 minutes.  Remove from heat.  Pour 2C of the soup into a separate bowl along with the half and half or cream, allow to cool.  Pour this mixture  into a food processor/blender. Process/blend until smooth and creamy then add back into the pot of soup and stir to fully mix. Add lime juice, and mix.


Pour soup into bowls (makes 6-8 bowls of soup) garnish with parsley and serve.
