Spicy Southwest Omelet
Ingredients
-6 eggs lightly beaten
-1/2 cup shredded cheddar cheese
-1 can black beans drained and rinsed
-1 cup spinach chopped
-1 roma tomato chopped
-1/2 small onion diced
-1/2 bunch of cilantro finely chopped
-1 bell pepper (any color variety) chopped, or use a poblano pepper to add more spice
-1 jalapeno seeded and rib removed
-1 small avocado
-1 nopales (cactus leaf)- pealed
-1/4 tsp garlic salt
-1/4 tsp cumin
1 tsp olive oil
Directions
In a mixing bowl mix together black beans, tomato, onion, and 1/2 of the cilantro. Add garlic salt and cumin, mix and set aside. Heat skillet or frying pan on stovetop, coat with small amount of cooking oil. Lightly sauté onions, bell pepper and nopales, remove from heat and set aside.
In the same pan add eggs to cover bottom of the pan, slightly cook until no longer liquid, then add spinach, bean tomato mix, and cheese. scrape around edges and fold into half. Allow to fully cook.
When done, remove to plate, top with sautéed pepper and nopales. Add sliced avocado, remainder of cilantro and jalapenos. ENJOY! Or if you love breakfast burritos, wrap in a a healthy whole wheat tortilla.
