Healthy Samoa Apple Cookies

With holiday parties just around the corner I wanted to share several healthier dessert options. You do not have to give up desserts to be healthy! Just focus on healthy ingredients.

Samoa Apple Cookies


  • 1 apple

  • 1/4 cup peanut, almond, or any nut butter, make sure it is a sugar free option

  • 1 tbsp maple syrup or honey

  • 1/4 cup unsweetened coconut flakes

  • 1/2 tsp vanilla

  • 1/3 cup dark or semi sweet chocolate chips


  • Core your apple. Then slice it into rounds forming circle slices with a hole in the middle looking like a Samoa cookie.

  • Mix the nut butter and maple syrup/honey and vanilla. Next mix in the coconut flakes.

  • press equal amounts onto all the apple rounds.

  • Melt the chocolate in a small bowl. Then drizzle a little over each slice.

  • Place in the fridge to allow the chocolate to harden. Enjoy a guilt free cookie swap out.

NOTE: can make a full batch using 6 apples, ( increase all ingredients to X6) dip the apple rounds in lemon juice before placing any ingredients on top to avoid browning.
