
INGREDIENTS:
For the Vinaigrette Dressing
1/3 cup olive oil
1/4 cup balsamic vinegar
2 Tbsp lemon or lime juice
1 clove minced garlic
1 Tbsp Italian seasoning
1/2 tsp salt
1/4 tsp pepper
1/8 tsp red pepper flakes (omit if worried about spice)
For the Pasta Salad
1 box Banza brand pasta or comparable low carb pasta
8 ounces mozzarella cut into small cubes
1-2 cups cherry tomatoes, sliced in half
1/2 small onion
1/2 cup fresh basil leaves, chopped
1 package uncured pepperoni slices (omit for vegetarian style)
olives (kalamata, mezzetta, black, green) choose your favorite variety
INSTRUCTIONS:

In a small bowl combine the olive oil, balsamic vinegar, lemon juice, minced garlic, Italian seasoning, kosher salt, and black pepper. Mix well until all the ingredients are blended. Set aside.
Cook the pasta according to the package directions. Once cooked, drain and rinse with cold water to stop the cooking process and keep the pasta firm.
In a large bowl, add pasta, sliced tomatoes, mozzarella cubes, onion, peperoni, olives, and basil. Drizzle with the prepared vinaigrette dressing and toss everything together. Add additional salt, pepper or red pepper flakes if desired
