Oven Roasted Cauliflower "Rice"

Cauliflower rice is very low carb and packed with nutrition unlike regular rice. Use this as a substitute for any dish that is served on or with rice. You can change up the added seasonings to give it an Asian, Mexican, American, or Italian taste to match the dish you're serving it with!  Also you can add fresh garnish such as parsley, dill, basil, oregano.


Oven Roasted Cauliflower "Rice"


INGREDIENTS-


1 large head cauliflower

 2 tablespoons olive oil

1 teaspoon salt

your choice of seasonings to desired flavor., examples: Italian seasoning, garlic powder, onion powder, cumin, chili powder, ginger powder,



INSTRUCTIONS-


Preheat the oven to 425 degrees (if available use an air fryer for crisper "rice")


Cut the cauliflower head into small pieces. Using  a blender or food processor chop/blend the cauliflower into small pieces, (don't over blend and turn to paste).  


Transfer to a mixing bowl, using a thin cloth or paper towel squeeze out as much water as possible this will prevent soggy "rice". Once water is removed stir in olive oil to coat.


Spread out onto a rimmed baking sheet in a thin layer  and sprinkle desired seasonings onto cauliflower.


Bake for 25 minutes , stirring every 10 minutes, or until the cauliflower is as browned. For extra crispness  use a high broil and place on the top rack for the last 1-2 minutes of cook time.
