Veggie and Hummus English Muffin Sandwich

This one is Perfect for a lunch or dinner, make ahead and pack for lunch! 



Veggie and Hummus English Muffin Sandwich



Ingredients


-Ezekiel's 4:9 whole grain English muffin (must be this brand! for high fiber low sugar)


-1/2 tsp olive oil


-1/2 tsp balsamic vinegar


-1/2  avocado, sliced


-salt and black pepper to taste


- red chili pepper flakes to taste to add spice, (optional)


-1/4 cup plain hummus (low sodium low or no sugar option)


1 teaspoon sriracha sauce


-1 large carrot, peeled and chopped into matchsticks


-handful of kale or spinach, chopped


1/2 cup loosely packed fire-roasted red peppers


1/2 a small cucumber, thinly sliced


1/4 c alfalfa sprouts



Instructions


cut the English muffin in half. Drizzle both sides with olive oil and vinegar and toast until lightly crispy.


Mash the avocado onto both halves, sprinkle with salt, pepper and red chili pepper flakes.


Spoon hummus onto avocado, spreading it into an even layer. Squeeze sriracha sauce over hummus and layer with carrots, kale or spinach,  red peppers, and cucumbers, and alfalfa sprouts. 

(1 serving)
